One More Cut
A reserve brisket from the Veterans Day smoke, ready at noon
We sold out of pastrami again. The phone started ringing about it today by 8:30 in the morning and the last slice was gone not long after noon.
But I kept a brisket in reserve — one more cut from the same batch — and sandwiches will be perfectly steamed tomorrow, Wednesday at noon.
Super small batch. When the sammies are gone, they’re gone.
